Aunt Ruby's German green tomato is on of the original tomato varieties that remain green when ripe. Instead of turning red like more varieties, harvest in this variety is done when the fruits become slightly yellow on the outside and soft to the touch. Flavor is very very intense and delicious. Green tomato varieties historically were used to prevent predation from birds, squirels and other animals, who used to wait for tomatoes to turn red to come eat them. With green varieties, the pests often have no clue when the tomato is ripe enough to eat, which reduces losses for farmers.
