Epazote is an extraordinary, but lesser know herb from Central and South america. Its scent is often compared to cilantro, citrus, resin and mint, and it is used similar to cilantro in mexican cuisine. It is most notably used when preparing beans, due to the highly compatible flavor,  but also due to the excellent digestive and anti-flatuent properties of epazote. It is also consumed in soups, salads, salsas and even herbal teas due to its health benefits. The best time to harvest stems is before flowers form.
 
Epazote is an excellent plant to have in gardens and farms. It is highly pest repellent and extracts of the plant can be used in the preparation of biopesticides as it contains compounds that repel all types of pest insects. They readily self seed once established, but can easily controlled from spreading too much. They contain a tuberous tap root that makes them highly drought resistant. They are also perennial, and can continue to produce for a few years.
