Finger millet is a naturally gluten-free grain that is an integral part of the culinary hertigage of india. Finger millet are superier to wheat and rice in terms of nutrition and health benefits and are also more environmental-friendly and sustainable.

 

Finger millets are great for individuals with diabetets and gluten-sensitivities and are a naturally cooling food for summer months.

 

At O'naturale farms we first soak our finger millets for 24 hours, then drain them and allow them to sprout of another 24 hours to produce sprouted finger millet. This finger millet is then sun-dried and milled to produce sprouted finger millet atta. Sprouted finger millet atta possess even more nutritional benefits than ragi, in an a easier to absorb form. It can be added to regular wheat flour to enhance the nutritional profile and add a boost of minerals like irona nd calcium to your food. It can be used to prepare a malt, halwa or ragi mudde, just like regular ragi flour.

 

We personally opt to use this flour to make gluten-free phulkas/ chapatis. The recipe for which is as follows:
